Step 1: Cook noodles or fry tofu or seitan
Example: Step 2: Buy vegetables in many different colors
Carrot, pepper and white cabbage
Radish, seaweed and zucchini
Avocado, red cabbage and cucumber
Spinach, red onion, peas and bean sprouts
Step 3: Add fresh herbs
Step 4: make a sauce of your favorite seasonings.

Put the rice paper in lukewarm water for 10 seconds or rinse it under the tap for about 20 seconds. The skin may still be hard when you put it on a cutting board, it will soften on its own.
Boil the noodles or grill the seitan or tofu.
Cut the vegetables and herbs julienne.
Place your favorite ingredients in the center of the rice sheet. Fold the bottom of the sheet over the ingredients and roll about a third. Fold the sides in and roll until you have a tight rice roll.
Mix the ingredients for the sauce.
Cut the summer rolls in half, dip them in the sauce and enjoy!
