Oriental peanut soup

A tasty peanut soup recipe is worth its weight in gold. But how do you make peanut soup? With this easy peanut soup you can create those Surinamese or Indian vibes in no time. That's because of the combination of peanut butter, coconut milk and red curry paste. Tastes much better than peanut soup from a carton, and that in almost the same amount of time. Another plus: this peanut soup recipe is (without chicken and egg) very vegan.

Red onions2
Red pepper1
Genmai miso1 heaped tbsp
Water500 ml
Coconut milk 80%200 mlPeanut butter smooth2 tbsp

This is how you make it

  1. Cut the onions into rings or pieces.
  2. Halve the carrot lengthwise and cut into oblique slices.
  3. Do the same with the zucchini and the bell pepper.
  4. Fry the onion in olive oil for 2 minutes until translucent. Add the carrot and fry 1 minute.
  5. Add the miso or curry paste, fry briefly and deglaze with 500 ml water.
  6. Then add the vegetables, together with the coconut milk and the peanut butter. Let the soup simmer for about 5 minutes.
