Lentil soup

A soup is made in this way. And the best part is: you make this vegan lentil soup with products that you almost always have in your kitchen cupboard. A typical quarantine lunch, shall we say!

This is what you need

Onions2 medium
Garlic3 cloves
Coconut oil (deodorised)2 tbsp
Red lentils400 g
Vegetable stock cubes miso2
Tomato cubes400 g
Water750 ml
Coconut milk 80%200 ml

This is how you make it

  1. Cut the onions into pieces.
  2. Put the coconut oil in a stockpot. Fry the onions in 2 minutes until translucent. Fry the garlic for 1 minute.
  3. Add the rest of the ingredients.
  4. Simmer gently for about 20 minutes, stirring occasionally.
  5. Puree with the hand blender.
