Blueberries, dark chocolate and Vanilla Date bring together freshness, creaminess, sweetness and a little saltiness in one bite. These chocolate bites are perfect as an afternoon snack, with coffee, as a small dessert or to share when friends come over. Make a batch, break the chocolate into rough pieces and put them straight on the table. They’re also handy to keep in the fridge for whenever you feel like something sweet. Add extra pieces of date, chopped almonds or a pinch of sea salt to give them your own twist.

This is how you make it

  1. Melt the chocolate in a bain-marie or over a low heat.
  2. Line a loaf tin with baking paper and spread the blueberries over the base in one even layer.
  3. Pour half of the chocolate over the blueberries and gently tap the tin on the worktop a few times to help the chocolate spread evenly.
  4. Swirl half of the Vanilla Date almond butter over the top. Repeat with the remaining chocolate and Vanilla Date almond butter.
  5. Use a wooden skewer to make figure-eight shapes through the chocolate and almond butter to create a marbled effect.
  6. Top with small pieces of date, chopped almonds and sea salt, if you like.
  7. Leave to set in the fridge for a few hours or in the freezer for around 30 minutes.
  8. Break or cut into pieces and enjoy!

Tip(s)

  • You can use any type of nut butter. So if you don't have hazelnut butter at home, try using cashew or almond butter.
  • Want even more pleasure? Then use TerraSana coconut whipping cream instead of coconut milk 80%. This is a plant-based alternative to whipped cream and provides even more creaminess. You can also top off the ice cream with a dollop of whipped cream. Tastyy!
