Zucchini bread with nuts, seeds and seeds

How do you make vegan zucchini bread, which is also gluten-free? This recipe is one for the books. With a protein-rich base of sunflower seed paste and oat flour you can make a delicious homemade bread in an hour. Baking with vegetables is sometimes just very easy!

This is how you make it

  1. Preheat the oven to 180°C.
  2. Roughly chop the walnuts and place in a large mixing bowl.
  3. Cut the zucchini into pieces and grind them completely in a food processor until smooth. Add this to the walnuts in the mixing bowl.
  4. Add the linseed, oat flour, baking powder and salt and mix well. Then add the sunflower paste.
  5. Mix the psyllium husks with 50 ml of water in a separate bowl and stir into the dough.
  6. Gradually add some more water if the dough is too dry. Make sure it doesn't get too sticky.
  7. Take the dough ball in your hands and shape an oval loaf, using your hands.
  8. Place the bread on a baking tray lined with baking paper. Bake the bread in the middle of the oven for 50 minutes.
