This is how you make it

  1. Finely chop the onion. Press the garlic. Slice the pointed pepper into strips. Shred the white cabbage very thin.
  2. Drain the seitan and keep the liquid.
  3. Heat the wok with coconut oil. Briefly fry the onion, then add the seitan, garlic, pepper and cabbage. Stir fry until the veggies are just soft. Add a splash of seitan liquid if it starts to stick.
  4. Mix all sauce ingredients in a small bowl and add a bit of seitan liquid so the miso dissolves well.
  5. Add the heat and eat ramen to the veggies, pour the sauce over it and add a little more seitan liquid if needed. After a minute of frying, gently loosen the noodles with a fork.
  6. Chop the peanuts.
  7. Divide the noodles over the plates and top with peanuts. If you like heat, add sriracha to taste.

Tip(s)

  • Want a bit more umami, add half a teaspoon of extra miso or a splash of tamari.
  • Prefer it a little sweeter, add a small splash of kecap or maple syrup.
