Umami-loaded avocado toast

Avocado toast is your go-to if you eat vegan. If you want something from vegetables on bread (yep, avocado is actually fruit), then avocado on bread is an obvious choice. But how do you make such a simple avo toast special? We do it with our tasty umami sauce and a pinch of chilli or cayenne. The oven-baked chickpeas give a nice extra bite, but are of course not mandatory. (The umami sauce is mandatory, though. 😉)

This is what you need

Omega 3 bread1 slice
Avocadohalve
Umami sauce2 tsp
Cayenne pepperpinch of
Nutritional yeast flakes1 tsp
Chickpeas (in a jar)3 tbsp

This is how you make it

  1. Preheat the oven to 220 degrees Celsius.
  2. Rinse the chickpeas and pat them dry with a kitchen towel. Mix the chickpeas with 1 tsp umami sauce.
  3. Spread the chickpeas on a baking tray lined with baking paper. Roast them in the preheated oven for 5-8 minutes.
  4. Mash the avocado. Mix with 1 tsp umami sauce and a pinch of cayenne pepper (optional).
  5. Toast the omega 3 bread (optional).
  6. Spread the avocado over the protein bread.
  7. Remove the crunchy umami chickpeas from the oven and spread them over the avocado toast.
  8. Sprinkle the toast with noble yeast for an extra umami flavour.
