This easy wok dish transforms udon into a delicious, kid-friendly meal. This is how you make it

  1. Cook the udon noodles according to the packet. Rinse with cold water and drain.
  2. Cut the vegetables into strips. Coarsely chop the spring onion.
  3. Drain the seitan, collecting the liquid. Tear or cut the too-large pieces of seitan into smaller pieces if necessary.
  4. Heat the coconut oil in a large wok or pan. Fry the seitan and green bell pepper over high heat. After 2 minutes, add the zucchini and the white parts of the spring onion to the pan and stir-fry for another 2 minutes. Then add the green parts of the spring onion.
  5. Turn the heat down to low. Add the udon noodles and gently stir everything.
  6. Add the hoisin sauce and mix well. Heat for another 2-3 minutes until everything is thoroughly warm.
  7. Garnish with sesame seeds and a dash of sesame oil.

Tip(s)

  • Also great as a topping: fried onions.
  • Udon is a thick noodle made from wheat. Prefer a thinner noodle? Go for ramen.
