Turmeric pasta with melted vegan cheese and olives

Are you a fan of 'mac 'n cheese', but do you eat plant-based? Or do you just like a nice creamy pasta? Then this is your meal. The creamy sauce is a great (and sustainable!) simulation of cheese. Vegan melted cheese, or vegan mac 'n cheese. Just give it a try!

This is what you need

For the melted vegan cheese:
Olive oil5 tbsp
Wheat flour3 tbsp
Oat drink350 ml
Nutritional yeast flakes2 tbsp
Turmeric powder1 tsp

This is how you make it

  1. Cook the tagliolini in plenty of boiling water for 3-4 minutes. Drain.
  2. Meanwhile, make the vegan cheese. Heat olive oil in a saucepan. Add the flour and stir briefly with a whisk. Add the plant milk and keep stirring. Turn down the heat.
  3. Add the cashew butter and stir until dissolved.
  4. Turn off the heat. Add the nutritional yeast and turmeric to the sauce and stir into a nice and smooth, yellow cheese-like sauce.
  5. Finely chop the parsley.
  6. Finely chop the olives and spicy red peppers.
  7. Mix the sauce with the tagliolini, the parsley, the olives and the peppers. Garnish with a slice of lemon.

Tip(s)

  • Do you want to add more vegetables? Then add a jar of grilled pepper !
