A good vegan brownies recipe is worth its weight in gold. In addition to being vegan, this recipe is also gluten-free and without refined sugars. The bite is more creamy than crispy, but that is of course part of a good brownie recipe! The proverbial icing on the cake is, of course, the sweet potato. Together with the dates, these provide the perfect texture and sweet taste of the brownies. A perfect sweet snack that you can enjoy almost unlimited. Vegan chocolate brownies for the win!

This is what you need

Sweet potatoes350 g
Hazelnuts brown100 g
Dates15Cocoa powder35 g
Vanilla powder1 tsp

For the toppings:Hazelnuts white25 g
Vegan dark chocolate (72%)50 g

This is how you make it

  1. Preheat the oven to 180 °C.
  2. Peel the sweet potato and cut into pieces. Steam for about 15 minutes. Let it cool slightly.
  3. Finely grind the hazelnuts in the blender. Set aside.
  4. Grind the dates in a blender.
  5. Add the sweet potato to the blender and mix.
  6. Add the rest of the ingredients and mix.
  7. Put baking paper in a cake tin. Divide the brownie mixture over the cake tin.
  8. Bake the brownies in the oven for 30 minutes.
  9. Do you want an extra top layer? Melt the dark chocolate au bain-marie anddivide over the brownie. Finely grind 25 g hazelnuts in a blender and divideover the chocolate layer.
  10. Let the brownie cool, remove from the cake tin and cut into pieces.

Tip(s)

  • Do you want more sweet? Add 3 tbsp maple syrup to the batter.
