This ramen with peanut sauce is one of our all-time favourites. It’s quick, simple and super tasty. On the table in just a few minutes, it gives you that real comfort food feeling. Creamy, savoury and a little spicy. Perfect for a busy day at the office or after a long day at home. You make everything in one pan, so no fuss. Just cook, mix and enjoy. Warm, nourishing and so easy you could make it every day.

This is how you make it
Bring water to a boil.
Cut the broccoli into pieces.
Add the ramen, broccoli and boiling water to a pan and cook for 4 minutes.
Meanwhile, finely chop the spring onion and add it to the ramen in the last few minutes.
Drain and save a little of the cooking water.
Mix the peanut butter with sesame oil, tamari and sriracha until smooth. Season with garlic powder. Add some of the cooking water to thin the sauce if needed.
Combine the noodles and vegetables with the sauce until everything is coated.
Cut the silken tofu into cubes and add on top.
Garnish with furikake and serve right away.

This peanut sauce works with all kinds of noodles: brown rice vermicelli, our rice or buckwheat noodles, or heat & eat ramen or udon.
Swap the tofu for any protein you like if you can’t find silken tofu or prefer something else.
