Protein bread with oyster mushrooms

Oyster mushrooms on bread, you probably see it on lunch menus from time to time. Now if you want to make a feast of your lunch at home, this is a simple recipe that you can have ready in no time. It's just the way to turn your home-office into a luxurious canteen! The umami sauce in this recipe completes the flavour. The umami sauce adds to the umami of the mushrooms, which goes perfectly with the protein bread (or whatever bread you choose to accompany it) and the hummus and red cabbage.

This is how you make it

  1. Chop the red cabbage ultrafine. You only need a little, a few tufts is enough. Finely chop the spring onion.
  2. Tear the oyster mushrooms into smaller strips.
  3. Heat the sesame oil in a pan over medium-high heat. Fry the oyster mushrooms until they turn golden brown. Halfway through, add the red cabbage, spring onion and garlic powder, with some salt and pepper if necessary.
  4. Turn down the heat when the oyster mushrooms are cooked. Add the umami sauce. Fry for another minute to allow the flavours to infuse.
  5. Spread the hummus on the protein bread.
  6. Top with the oyster mushrooms and red cabbage.
  7. Sprinkle with gomasio and some crispy onions or spring onion, if desired.

Tip(s)

  • Don't have red cabbage in the house? Replace it with another crunchy vegetable, spinach or lettuce.
