This is how you make it

  1. Let the cashew nuts and pistachios soak overnight in a bowl with cold water.*
  2. Preheat the oven to 180 ° C.*
  3. Mix the almond flour, spelt flour, baking powder and vanilla powder together in a bowl.*
  4. Melt the coconut oil in a refractory bowl in the oven. Add this, together with the maple syrup and plant milk, to the flour. Mix well.*
  5. Spread the dough over a piece of baking paper, in a 10-15 cm square. Bake for about 20 minutes.*
  6. Then start the matcha mascarpone: put the cashew nuts and pistachios in the food processor and grind them all fine. Add the coconut milk, maple syrup and matcha and mix to a smooth mixture.*
  7. Cut the cooled cake into pieces. Drizzle with a little coconut liqueur if you wish.*
  8. Put a small layer of matcha mascarpone in dessert glasses and top with a layer of cake. Repeat this alternately until the glasses are filled.*
  9. Optional: sprinkle with some extra pistachio nuts.*
  10. Put in the refrigerator for several hours before serving.*

  • Do you eat gluten free? Replace spelt flour for oat flour !
