Teriyaki tofu with fried rice

How to make tofu tasty? By 'squeezing' as much moisture out of the tofu as possible and then seasoning it with teriyaki wok sauce. It gives your tofu that perfect glaze, and combo of salty and sweet. This recipe for fried rice is ideal if you have leftover rice. In fact, we recommend using day-old rice in this vegan fried rice recipe. Because honestly, with 'old' rice, fried rice is just the tastiest. An ideal recipe for busy days. The only real seasoning you need is our teriyaki wok sauce. This tasty sauce has all the flavours in it, and that just gives your rice dish a different twist.

This is what you need

For the base:
Onion1 medium
Red pepper1
Carrots3
Roasted sesame oil1 tbsp
Green peas200 g
Teriyaki wok sauce75/100 ml
Spring onions2

This is how you make it

  1. Cook the rice according to the instructions on the packet. 
  2. Chop the onion finely. Cut the pepper and carrots into very small cubes. 
  3. Heat 1 tablespoon of sesame oil in a frying pan. Add the onion and carrot and fry for a few minutes. Then add the red pepper and peas. And fry until they start to soften (5-7 minutes). Add a little teriyaki sauce to the vegetables as they fry. 
  4. Meanwhile, dice the tofu. 
  5. When the vegetables are cooked, remove from the pan and set aside. 
  6. In the same frying pan, heat 1 tablespoon of sesame oil over medium-high heat and fry the tofu until golden brown. 
  7. Turn down the heat a little and let the pan cool slightly. Next, add 2 tablespoons of teriyaki wok sauce to the fried tofu and fry briefly so that the tofu gets colour. 
  8. Then add the vegetables and unpolished rice to the tofu. Pour the remaining teriyaki sauce over the rice and vegetables. Stir everything well and let it heat up for a few minutes.
  9. Finely chop the spring onion and garnish the rice with it.

Tip(s)

  • This recipe is handy if you have leftover rice and/or vegetables. Your fried rice will be tastiest if your rice is a day old. 
  • Vary the vegetables!
  • Do you like it spicy? This recipe is delicious with sriracha or sambal.
  • Garnish with sesame seeds, cashew nuts or chopped peanuts.
