Pokebowl met tempeh teriyaki

Ordering vegan poke bowl? No need, making a poke bowl yourself probably takes less time than waiting for the delivery guy! This also allows you to choose whether you want a hot poke bowl or a cold one. If you prepare the rice a day in advance, most of it is already done and all you have to do the next day is cut some vegetables and fry the tempeh. Don't forget the teriyaki wok sauce, as it gives the tempeh a delicious flavour!

This is what you need

Sushi rice150 gUmami sauce4 tbsp
Cucumber80 g
Avocado1
Carrot80 g
Sushi nori1 sheet
Edamame beans100 g

This is how you make it

  1. Cook the sushi rice according to the instructions on the packet. Gently mix the cooked rice with the umami sauce and leave to cool.
  2. Cut the tempeh into small pieces. Fry the tempeh in 2 tablespoons of sesame oil until golden brown and crispy. Turn down the heat to low and wait for the pan to cool slightly. Then add the teriyaki wok sauce stir until the tempeh has absorbed the sauce.
  3. Grate the cucumber and carrot. Cut the avocado into large cubes.
  4. Heat the edamame (frozen) in boiling water for 2-3 minutes.
  5. Divide the sushi rice between two bowls.
  6. Add the cucumber, avocado, carrot, edamame and teriyaki tempeh to the bowls in separate sections.
  7. Cut the nori sheets into small pieces or strips. Garnish your pokebowl with these.
  8. Sprinkle with some extra umami sauce if necessary.

Tip(s)

  • Mix vegan mayonnaise with a little sriracha, miso or wasabi, and you have a tasty secondary sauce. This is how to make your pokebowl even tastier!
  • Prepare the rice a day in advance. Then on the day itself, all you have to do is cut some vegetables and fry the tempeh.
