This is a healthy version of the chocolate-chip-ice-cream-cookie sandwich. Completely vegan and with pure ingredients. The cake is made from oats and peanut butter, the ice cream from banana, cocoa and hazelnut. The perfect combination of crunchy and creamy, of hot and cold. A tasty treat for a party or birthday.

This is what you need

For the cookies:Peanut butter crunchy90 gOat flour150 g
(celtic) sea salt1 pinch of
Maple syrup grade C
For the ice creams:
Hazelnut butter2 tbsp
Cocoa powder2 tbsp
Cocoa nibs1 tbsp

This is how you make it

  1. Peel the banana and cut it into pieces, then leave it in the freezer overnight.
  2. Preheat the oven to 180°C.
  3. Mix the oat flour, maple syrup, peanut butter and a pinch of salt.
  4. Make balls with the dough and place them on a baking tray (previously place baking paper on the base). Then flatten them as much as possible and bake in the oven for 10 minutes until golden brown.
  5. In a blender, add the bananas, hazelnut cream and cocoa and blend until it reaches a homogeneous texture. If the mixture has become too soft, put it back in the freezer for about one or two hours.
  6. Finally, place the ice cream between the two biscuits and decorate with cocoa shavings.
