Making energy balls without dates? That's not standard, but it's nice. If you replace the dates with apricots (super low glycemic index!), the balls will be just as sweet and creamy, but your blood sugar will spike less. Energy balls for more constant energy! These balls are especially for the ginger lover, and contain a lot of turmeric. A quick healthy snack for in between or on the go. Must try!

This is how you make it

  1. Coarsely chop the stem ginger.
  2. Grind the apricots into an even mass in the food processor.
  3. Put all ingredients in a bowl and mix.
  4. Turn the dough into balls.
  5. Roll the balls in coconut blossom sugar
