These energy bars are a healthy snack. Ideal to have in your freezer as a healthy snack. Instead of nuts and oatmeal, you use chia, goji and coconut in these tasty energy bars. A tasty snack full of superfoods and without grains. Chia seed is high in protein, fiber and contains omega-3 fatty acids. So it fits well in a plant-based diet!

This is how you make it

  1. Melt the coconut oil in a bowl in the oven.
  2. Puree the dates in a blender until smooth. Add the chia seeds, the coconut grater, maple syrup and melted coconut oil and grind again.
  3. Add the goji berries and pulse a few times briefly to make the red of the goji berries still visable.
  4. Put a sheet of parchment paper in a baking tin, add the mixture and press well well with a spoon.
  5. Leave to set in the refrigerator for at least 2 hours.
  6. Cut it into nice strips, wrap in some baking paper and store in the refrigerator or freezer.
